8 Ingredients

skinless chicken thighs, stewed tomatoes, (optional spinach), chopped celery, diced onions, salt, pepper, curry, old bay

Shop Ingredients

Cooking Instructions

- turn oven to 325 degrees

- prep: chop celery, onions

- rub olive oil on chicken, set aside on plate

- pour can of stewed tomatoes in baking pan

-pour can of spinich on top of stewed tomatoes (optional)

- place rubbed chicken onto tomatoes

- season with salt, pepper, old bay, and curry 

- bake for 30min, pull flip, add more curry, bake for another 30

Serve with: wild or yellow rice
